Today I am sharing a simple vegetarian/vegan style recipe that is nutritious and delicious! It is one of my favorite recipes for a light dinner and only takes a few minutes to prepare!
I have significantly changed my diet and healed fungal in the body in the past year and a half and my body no longer really craves anything other than healthy choices with an occasional craving for something sweet which I don’t deny myself any longer or feel guilt when I do indulge.
The change in my diet occurred naturally after doing significant self healing work and clearing personal trauma and raising my self love level massively. I easily dropped over 40 pounds which was always a struggle in the past for the majority of my life no matter what I did or how much I worked out.
The following recipe is one of my favorite light dinners that is super healthy and good for healing your gut and it is fairly low glycemic and can be eaten on a keto diet at certain intervals.
Super easy to make in just a few minutes!
You will need: slivered carrots, fresh spinach, coconut oil, pink Himalayan salt and raw slivered almonds.
I got all of these items at my favorite Trader Joe’s, it’s about the only grocery store I have shopped at for about 15 years other than Sprouts.
You can use the amount that you like. I boiled the carrot slivers until they were just tender. Then as I let them drain, I heated coconut oil and a pinch of pink Himalayan salt (which has 84 super healthy nutrients for your body! read more about that here) on medium heat (coconut oil heats very fast) and threw in 2 very large handfuls of fresh spinach and quickly flash “fry” it in the oil before it wilts. (Be careful as it might splatter a little and you don’t want to get hot oil in your eyes). Put the carrots and spinach in a bowl, then add a little more coconut oil and another pinch of pink Himalayan salt to the hot pan, quickly add slivered raw almonds (for just a little added protein and delicious nutty flavor!) for just a few seconds to toast them and then add them to your vegetables. Like heaven in your mouth!
Personally, when I consume high amounts of vegetables my body feels better, moves better, I have more energy, feel healthier and I have no bloating. I don’t consider myself vegetarian (I don’t like labels that confine me like that), but I do eat a mostly vegetarian lifestyle with eggs as my main source of protein and occasionally I eat fish either salmon or mahi-mahi. They are 2 of my favorites and super easy to cook and melt like butter in your mouth!
